Chocolate Truffles!!!
I definitely want to make these!
Trio of Chocolate Truffles
2/3 C. whipping cream
(12 oz.) package (about 2 C.) semisweet chocolate chips
2 t. vanilla extract
1/4 C. unsweetened cocoa powder
3/4 C. (about 2 1/2 oz.) sweetened shredded coconut, toasted
1/2 C. (about 2 oz.) finely chopped unsalted pistachios
Bring cream to a boil in heavy medium saucepan. Remove from heat. Add chocolate; whisk until melted and smooth. Whisk in vanilla. Pour into medium bowl. Cover; chill until firm, about 3 hours. Line baking sheet with waxed paper. Drop by rounded teaspoonfuls onto prepared baking sheet. Freeze until firm, about 45 minutes. Place cocoa, coconut and nuts in separate bowls. Roll truffles between hands into rounds. Roll 1/3 of truffles in cocoa, 1/3 in coconut and 1/3 in nuts. Cover with plastic; chill until ready to serve. (Can be prepared 2 weeks ahead. Keep chilled.)
Note: Flavor the chocolate mixture with some grated orange peels or espresso powder, if you like.
Makes about 30 truffles.

So The Woods' must be like the best place to hang out lol, I saw 3 Rachel, Tim, and Mark there all at the same time! But here is some really good things to ponder that I got from a bible study tonight... On Romans 9:30 - 10:5
- If the one condition of salvation is professing with our mouths that Jesus Christ is Lordthan how many times during the week do we profess this to people who needto hear it?
- How amazing is it that in the Reformed faith we are fed so much doctrine and understanding of the Gospel, yet those who never have even seen a Catechism, still work to understand the same things that we have so clearly laid out for us? ie: the doctrine of election
- Do we truly ponder the thought that we are by nature sinners, even if we don't go one mile over the speed limit, cheat one cent on our taxes, say one wrong thing~ even if we never did these things, we are still sinners by nature. How then can we possibly be considered righteous?! But by the sheer grace of God, and the incredible sacrifice of His only begotten Son, we are made perfect!

Tonight was a very sad night for a couple of families in the Ferndale area, 3 teens were injured ~ 1 killed while they were street racing on the Guide (yes I know, not very smart) but you can only imagine the pain the families are suffering right now, so just keep them in your prayers if you think about it <3
